Nothing makes me happier than knowing I am cooking with 100% home-grown vegetables. This season was an amazing season for tomatoes. My parents garden gave an abundance of delicious and juicy tomatoes, so did my boss's garden. I was set with tomatoes! I had so many that I had no idea what to do with them! We could not eat them fast enough.
After the house move, I knew I had to do something quick with them before they went bad. So I decided to make some good old home made tomato sauce :)
Ingredients:
-tomatoes (as many as you'd like)
-garlic
-Italian herbs (oregano, parsley, basil) fresh or dry
-salt & pepper
-green olives
Procedure:
I found that an easy way to peel tomatoes, actually my parents taught me this trick, is to boil each tomato for about a minute, the skin comes right off!
Once all of your tomatoes are peeled, chop them up real good (its O.K if they mash up) and place in a large sauce pan.
Juices and All!!
Cook the tomatoes for about ten to fifteen minutes. If the sauce is way too juicy add a teaspoon or two of flour to thicken it up.
Later add your herbs, salt/pepper and green olives. Let simmer for another ten to fifteen minutes!

Tip: I added a little mozzarella cheese to the sauce, mmmmm!

Delicious! Hubby and I decided that next year we are having a garden....and I can't wait!
