Reading the first chapter was heart wrenching and infuriating. I though that by being a vegetarian I was doing all good for the animals. For about four days now, I have not been able to put this book down! and I have been sharing every bit of information that I have learned with my family. I have now been making day to day changes in my life, making vegan choices with my foods. I read about people who transition from vegetarianism to veganism, their advice is to take it one day at a time. I want to make this New Year about a transition to becoming vegan, however long it takes I will be sure to make the best choices I can.
So I would like to re-introduce my blog, as I will be cooking a lot more vegan meals that I will be sharing here. My sister and I have been excited about starting our vegan baking too! and I am even more excited to be sharing that with you guys. To expand a little bit more, I want to start writing about earth friendly and green products that serve for your home as well as body and mind.

Now here is my very first Vegan Recipe!
VEGAN BEAN CHILI
Method: Crock Pot
INGREDIENTS:
- 1.5 cups Adzuki beans, cooked
- 1.5 cups Pinto beans, cooked
- 1.5 cups Red Kidney beans, cooked
- 1 medium/large onion
- 1 medium bell pepper (color of choice)
- 4 celery sticks, finely chopped
- 3-4 cloves garlic, minced
- paprika, cumin, chili powder, salt and pepper
- hot chili sauce
- 4 tomatoes diced, save the juices
- 1 can tomato paste
- 5 teaspoons whole wheat flour
- 2 cups corn
- 1 cup water
- 1 cup veggie broth
DIRECTIONS (IN ORDER YOU NEED TO PUT IT IN)
- celery, onion, garlic
- beans
- tomato and corn
- water and broth
Let it cook on HIGH for about 2 hours.
Then add in spices to taste, mix and let cook for another hour.
Add your flour, mix well and cook for another 30 minutes or until it is Chili consistency.


Oh I love aduki beans so nice tht you included them in your chili. Kudos to you for your live style change toward veganism. I am struggling with cheese issue at the moment. Very nice photos for the chili. Have a wonderful day.
ReplyDeleteThanks Suzi! To be honest cheese IS the hardest thing for me too...but its not impossible! To start I told myself to at least omit cheese during the week days, and just do my best on the weekends. Little by little it gets easier.
